Cannelé (or cannelé de Bordeaux) is a small French pastry with a soft, tender custard centre and a dark, thick caramelized crust. Originally from the Bordeaux region, it’s now a familiar sight in pâtisseries across France and beyond. The pastry is known for its fluted, striated cylinder shape — often around 5 cm in height depending on mould size and recipe.

About the Brand
Couple weeks ago I decided to learn further into canele. After trying out mold from couple brand, I think it’s fair to say I prefer matfer the most.
The main reason is the shape. All these molds work perfectly, but storage wise, matfer work the best. They won’t stick on each other, and I like the shape in general.
