Description

Louis Francois Mara des Bois Strawberry Chunks are dehydrated strawberry pieces with a concentrated sweet-tart flavour and crisp texture. They bring strawberry flavour, colour and visible fruit inclusions to pastry, chocolate and frozen desserts without introducing the additional water of fresh fruit or purée, making them particularly useful when flavour intensity and texture need to be added without diluting the recipe.

Use

Incorporate directly into dry or low-moisture preparations where the fruit pieces should remain visible and textured. They can also be ground or crushed when a finer strawberry inclusion or infusion is required.

Recommended Dosage

  • Ice cream: approximately 2.5%
  • Chocolate: approximately 4%
  • Yogurt: approximately 3%
  • Infusion: approximately 1%
  • Cookies: approximately 4%

Louis François gives a general working range of approximately 10–40g/kg. Adjust according to the application and desired flavour and texture.
