Les Vergers Boiron Kalamansi Purée is made from 100% kalamansi sourced from Long An province in Vietnam’s Mekong Delta, with no added sugar. The small citrus fruits are pressed whole to capture their aromatic peel oils as well as their juice.

Flavour and Applications

Bright yellow, opaque and slightly oily, this purée has an intense citrus aroma with lively zest and softer notes reminiscent of mandarin and orange.

Use it in curds, crémeux, mousses, ganaches, pâte de fruit, cake inserts, sorbets and granitas, or add its distinctive acidity to cocktails, mocktails and sparkling drinks. It also suits vinaigrettes, dipping sauces and marinades for seafood or poultry. Pair kalamansi with mango, banana, coconut, pineapple, ginger, white chocolate or dark chocolate.

Thaw the purée in its closed packaging in the refrigerator at 2–4°C. Once fully thawed, mix thoroughly to restore an even consistency before use.

While we make every effort to keep the purée cold throughout transit, we cannot guarantee that it will remain completely frozen upon arrival, particularly during warmer weather.

If the purée arrives partially thawed but still cold, simply place it back in the freezer as soon as possible. If it arrives completely thawed, it is still safe to use provided the inner seal remains intact. Any unused portion may be refrozen for longer-term storage.

Purées with a higher fibre content may naturally separate after thawing. Simply stir well before use. For convenience, we also recommend portioning the purée into your own containers before refreezing so you can thaw only what you need.
