Les Vergers Boiron Green Apple Purée is made with 97% French-grown Granny apple, with citric acid and ascorbic acid helping preserve its characteristic colour. It contains no added sugar.

Flavour and Applications

This vibrant green purée expresses the Granny variety’s pronounced tartness and freshly crushed fruit character, followed by subtle herbaceous, bitter-almond and grape notes.

Use it in tart fillings, crémeux, fruit gels, compotes, glazes, sorbets and granitas, or add crisp acidity to smoothies, cocktails, mocktails and sparkling drinks. It also suits vinaigrettes, chutneys and sauces for pork or duck. Pair green apple with caramel, vanilla, cinnamon, almond, hazelnut, lemon, ginger or fresh herbs.

Thaw the purée in its closed packaging in the refrigerator at 2–4°C. Once fully thawed, mix thoroughly to restore an even consistency before use.

While we make every effort to keep the purée cold throughout transit, we cannot guarantee that it will remain completely frozen upon arrival, particularly during warmer weather.

If the purée arrives partially thawed but still cold, simply place it back in the freezer as soon as possible. If it arrives completely thawed, it is still safe to use provided the inner seal remains intact. Any unused portion may be refrozen for longer-term storage.

Purées with a higher fibre content may naturally separate after thawing. Simply stir well before use. For convenience, we also recommend portioning the purée into your own containers before refreezing so you can thaw only what you need.
