Description

Amaou is a celebrated strawberry developed in Fukuoka Prefecture. Its name draws on four Japanese words describing the fruit: akai for red, marui for round, ōkii for large and umai for delicious. The variety is recognized for its glossy deep-red appearance, generous size and concentrated balance of sweetness and acidity.

Why TAKA Amaou Strawberry Purée?

This Sakura Series purée is made specifically with Fukuoka-grown Amaou strawberries rather than a blend of unnamed strawberry varieties. The frozen berries are thawed at a low temperature, processed and rapidly heated and cooled to retain their fresh fruit character. Its named regional variety delivers a richer and more distinctive Japanese strawberry profile than a conventional blended purée.

Flavour and Applications

The purée has a deep strawberry colour, fragrant aroma and full-bodied flavour. Its pronounced sweetness is balanced by enough acidity to keep pastry, frozen-dessert and beverage preparations lively.

Use it in mousses, crémeux, shortcakes, tart fillings, glazes, pâte de fruit and plated desserts, or prepare sorbet, gelato and frozen parfaits. It also works beautifully in smoothies, milkshakes, cocktails, mocktails, dessert sauces and fruit vinaigrettes. Amaou strawberry pairs especially well with cream, white chocolate, matcha, pistachio, vanilla, yuzu, balsamic vinegar, basil and shiso.

We take special care when shipping frozen purées and limit available delivery methods to help them arrive in good condition. Depending on your location, only local delivery and express shipping options will be available at checkout. If your order qualifies for free shipping, our complimentary shipping service is standard shipping; express service may be available for an additional surcharge.

While we make every effort to keep the purée cold throughout transit, we cannot guarantee that it will remain completely frozen upon arrival, particularly during warmer weather.

If the purée arrives partially thawed but still cold, simply place it back in the freezer as soon as possible. If it arrives completely thawed, it is still safe to use provided the inner seal remains intact. Any unused portion may be refrozen for longer-term storage.

Purées with a higher fibre content may naturally separate after thawing. Simply stir well before use. For convenience, we also recommend portioning the purée into your own containers before refreezing so you can thaw only what you need.
