Les Vergers Boiron Frozen Banana Purée is made with Cavendish bananas from Ecuador, ripened under carefully controlled conditions to develop their natural sweetness and aroma. A small amount of ascorbic acid helps maintain the fruit’s appearance without adding sugar.

Flavour and Applications

This thick, beige purée offers a naturally sweet banana flavour with subtle mocha-like aromatic notes. Because banana contains starch, its texture may appear slightly sticky or floury.

Use it in cakes, muffins, mousses, creams, ganaches and plated desserts, or add body and flavour to gelato, ice cream, frozen pops and smoothie bowls. It is equally useful in milkshakes, smoothies, cocktails and tropical mocktails, as well as chutneys and sweet-spiced sauces. Banana pairs particularly well with chocolate, caramel, coffee, coconut, rum, peanut and warm spices.

Thaw the purée in its closed packaging in the refrigerator at 2–4°C. Once fully thawed, mix thoroughly to restore an even consistency before use.

While we make every effort to keep the purée cold throughout transit, we cannot guarantee that it will remain completely frozen upon arrival, particularly during warmer weather.

If the purée arrives partially thawed but still cold, simply place it back in the freezer as soon as possible. If it arrives completely thawed, it is still safe to use provided the inner seal remains intact. Any unused portion may be refrozen for longer-term storage.

Purées with a higher fibre content may naturally separate after thawing. Simply stir well before use. For convenience, we also recommend portioning the purée into your own containers before refreezing so you can thaw only what you need.
