Bachour Gastro explores Antonio Bachour’s most gastronomic approach to pastry: 52 sweet and savoury creations designed largely in a compact, one- or two-bite format where flavour, texture and presentation have to make an immediate impression.

The book is organised around three distinct ideas. Inspiration revisits recognisable classics such as Paris-Brest, Saint-Honoré, Black Forest, Mont Blanc, cheesecake and lemon pie, preserving their identity while translating them into Bachour’s contemporary visual language. Creation moves into more original compositions shaped by his travels, using fruit, chocolate, spices and nuts as recurring points of departure.

The third section, Brunch, expands the book beyond conventional pastry. Quiche made with croissant dough, filled bomboloni, challah, waffles, bagels, buns, tartines and croque madame bring savoury cooking and bakery technique into the same small-format philosophy. This is what makes the “Gastro” title meaningful rather than decorative: the book sits deliberately between pâtisserie, bakery and culinary preparation.

All 52 creations are supported by recipes, process photography, technical guidance and Bachour’s production notes.
