With only one drop, it turns taste and flavour smoky and tasty!

This soy sauce is made by a collaboration between Yuasa Soy Sauce and Mr. Koshimizu, who is a "smoked specialist" and chef of restaurant “Kun” in Akasaka, Tokyo.  It tastes deep and rich with the smoky smell.

A very fun soy sauce to use, there is no dashi in the soy sauce but it tastes like Katsuo bonito dashi.  It pairs wonderfully with cheese, sashimi, meat, salmon fillet, oyster, egg dishes etc.

What This Soy Sauce Does

  • Deep taste and aroma as if bonito soup is included
  • Further amplify the scent of fragrant soy sauce
  • Deep umami, sweet and mellow (no salty taste)
  • The power to increase the flavour of the ingredients

Ingredients: soy beans, wheat, rice, sea salt

    Yuasa Soy Sauce Co., Ltd. was established with the desire to produce the best soy sauce in Japan and the world.  This very soy sauce was their first product.  It combines traditional Yuasa methods and ancient techniques inspired by a 1,500 years old agricultural text and cookbook, Saimin Jijutsu 斉民要術.

    • Salt used is harvested from Goto Nada Sea, Nagasaki
    • 100% Tamba Kuromame (black soybean) used
    • Soybeans are boiled in cauldrons for 4 hours, rather than industrially steamed
    • The boiling juice is used in place of water for extra umami
    • Barrel aging mash is paddled manually over the period of 2 years
    • Skimming, mixing, paddling, straining are all done by hand
