Ingredient for Warabi Mochi

Warabiko (わらび粉) refers the starch of the root of the “warabi” plant in Japan.  While warabi is a type of edible fiddlehead greens, its root starch gives a mild sweetness and when cooked with water, provides a transparent, lightly crunchy yet yielding gel texture that is quite unique.

The rare “hon-warabi-ko” (true warabi starch powder) refers to the starch coming from 100% warabi roots, which is extremely scarce.  The popular Japanese confectionery warabi mochi is mostly made with a blended starch that may or may not contain hon-warabiko.

Nowadays, even in the wholesale markets in Tokyo, warabiko generally refers to the blended starch that yields the same effect in a warabi mochi recipe.

Ingredients: potato starch (from Hokkaido), yam starch, processed starch
