As the newest addition to Valrhona's innovative Blond Range, Orelys 35% gets its unique bronze colour and distinct earthy flavour from a special ingredient: Mauritian Dark Muscovado Sugar. This gourmet chocolate's sweet freshness is clear from the very first bite thanks to its maple and light liquorice notes. Hints of biscuit complement the freshness as you taste the chocolate.

To obtain Mauritian dark muscovado sugar, sugar cane is crushed then pressed to extract the juice. This juice is heated, dried, and ground. Because of its natural molasses content, muscovado sugar has a rich brown colour and delicate maple aromas. 

Muscovado sugar is a pure, unrefined cane sugar renowned for its strong molasses flavour and moist texture. The name of the sugar finds its origins from the Spanish word for unrefined, "mascabado," since this sugar never undergoes the spinning process used to dry and remove plant material from other sugars. This keeps more molasses and mineral richness giving it that unique flavour which characterizes Orelys 35%. 

Orelys pairs well with herbs and spices like cinnamon, tea, vanilla, mint, and paprika; fruits like banana, apricots, pears, red berries, kiwis, and citrus; and other flavours like cookies, coffee, caramel and champagne.

Summer Shipping: 

At above 26°C, cocoa butter in chocolate products may start melting, and recrystallize as white streaks or marks on the chocolate's surface.  This phenomenon is called 'fat bloom'.  While it may not have the perfect appearance, bloomed chocolates are safe to eat and use in recipes.

During summer months when the temperature is relatively warm, we advise adding cold packaging to your shipment in order to minimize the risk of melting.  While we are careful and diligent in maintaining the temperature of your package, we unfortunately cannot guarantee the products in the cold packaging will not be affected by unusually warm weather and irregular transit time.
