Sosa's Pro-Pannacotta is an Iota set derived from red algae and carrageen. It is used as a vegetarian alternative to gelatine.
It can be used to create a perfect soft gel for panna cotta, flan, pudding and drinkable jellies. Once set it is heat stable until about 50°C. Pro-Pannacotta allows you to set a panna cotta style mousse into any shape. It can not be frozen on its own as it will leak water on defrosting; if combined with Carob Gum or Locust Bean Gum, it can be frozen prior to use and defrosted with no ice crystals. Perfect for both savoury & sweet mousses.
Properties: Rapid gelling, heat-reversible at 140-160°F (60-70°C). Soft, elastic texture.
Use: Mix with a cold liquid and bring to a boil while stirring. The mixture jellifies when cooled to between 140-158ºF (60-70ºC).
Observations: The gelatin it forms becomes fluid when shaken and then resumes its original gelatin form. A gelling agent that improves its capacity with calcium-containing fluids.
Elaborations: Flan-type desserts, panna cotta, egg-free puddings. Drinkable gelatins. Royales.
Recommended Dosage: 0.5 - 1.5%
Suitable for vegetarians, vegans and coeliacs. Halal.
