Sweetened red bean paste (고운 적앙금), is one of the fundamental components of Japanese & Korean confections. Carefully selected red beans (some say adzuki or azuki) are cooked until soft, their shells left mostly intact to create this coarse texture that vividly reminds one of the bean's texture.
Red bean paste is the default filling ("an", or "anko") for traditional and modern Japanese sweets. For opened package, ideal storage is in an airtight package and refrigerated. For longer term storage, this product can be frozen. Simply thaw in microwave or at room temperature before use.
