Sosa's Procrema is a mixture of stabilizers and emulsifiers.  It helps increasing over run and improves consistency as well as stabilizing free water in the ice cream to prevent ice crystals from forming.  It is used to mix with any liquid or semi-liquid preparation with a dairy base.

For optimal use, mix hot (max. temp. 175°F or 80°C) in any liquid (purées, stocks, creams or flavoured water) and stir in vigorously.  Once it has been mixed into liquid, it is advisable to cool for 8 hours so it can mature (40°F or 4°C) and components are perfectly hydrated before being frozen.

Use: Mix with base

Application: Any liquid or semi-liquid preparations, creamy base.

Elaborations: Dairy base ice cream.

Observations:  To successfully quantify ice cream, you need to incorporate around 20% extra solids such as sucrose or dextrose.

Recommended Dosage: 5g /kg

Suitable for vegetarians.
