Soy Lecithin is a natural vegetable glycerol from soy that alleviates the union between fat molecules and water. It is used as an emulsifier, or anti-freezing agent, when added to food, but can also be used as an antioxidant and to preserve flavour.
Ideal for making ice cream, sorbets, Bundt cakes, pralines, truffles and mousses etc. It can keep ice cream from over-freezing.
Use: Mix in cold and bat in order to introduce air.
Remarks: Difficulties with alcohols and certain infusions.
Recommended Dosage: 5 - 8g/L
Suitable for vegetarians, vegans and coeliacs. Halal and Kosher certified.
