Cherry blossom bean paste, also known as sakura an (桜あん), is a traditional Japanese dessert filling made from sweet bean paste (anko) and cherry blossom leaves (sakura).
It is commonly used as a filling in sweets such as mochi, dorayaki, and manju etc. The cherry blossom leaves give the filling a delicate pink colour and a subtle floral flavour that complements the sweetness of the red bean paste.
