On the main street in Uji, a small town just south of Kyoto, Japan, the smell of hojicha fills the air. The town is famous for producing the best green tea in Japan. Tea merchants would roast green tea with rotary roaster just outside their shop to pull customers in from afar with this aromatic thread.
Roasted green tea, hojicha in Japanese, has a warm, sweet aroma, and a slight hint of smokiness. It does not have a lot of caffeine, and is often served at the end of a meal.
